Ingredients

  • 1 1/2 pounds red potatoes diced
  • 1/3 cup light mayonnaise
  • 1/3 cup nonfat plain Greek yogurt
  • 1 bag Creamy Ranch Dressing & Dip Mix
  • 2 tablespoons dill relish
  • 1/4 cup finely diced red onion
  • 3 large eggs hard boiled, peeled, and chopped
  • 1/4 cup chopped chives

DIRECTIONS

  • Add diced potato to a pot and cover with water; bring to a boil. Cook for about 10 minutes or until fork tender.
  • Drain and transfer to a mixing bowl. Mash some of the potatoes.
  • In a separate bowl whisk together the mayo, Greek yogurt, and Creamy Ranch Dressing & Dip Mix.
  • Add the potatoes and remaining ingredients and stir until completely combined. Refrigerate until ready to serve.
