  • 1 pound cooked shrimp peeled, deveined, and chopped
  • 3 tablespoons light mayonnaise
  • 1/2 lemon zested
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • 1 1/2 teaspoons Cajun Seasoning
  • 3 teaspoons Golden BBQ Sauce
  • 3 celery stalks diced
  • 1 cucumber diced
  • 3 scallions sliced
  • 6 whole wheat rolls toasted if desired


  • In a medium bowl, mix together all the ingredients except rolls. Cover and refrigerate for at least an hour. Fill each roll with a 1/2 cup of shrimp mixture.
  • Top off each salad roll with more scallions and paprika if desired.
