Balsamic Tortellini Salad is a tortellini salad recipes that my friends love and ask for again and again! I serve it with a crusty loaf of bread and salad.

Balsamic Tortellini Salad is loaded with pasta, salami, ... fresh spinach topped with parmesan cheese and balsamic dressing.

Servings: 10

Ingredients

  • 1 pound cheese tortellini
  • 1 tablespoon Natural Grapeseed Oil
  • 1/2 bunch broccoli rabe trimmed
  • 1/2 pound fresh mozzarella cheese diced
  • 4 plum tomatoes seeded and diced
  • 2 ounces sliced pepperoni halved
  • 1/2 red onion thinly sliced
  • 1/2 cup European Dipping Oil - Mediterranean Balsamic

DIRECTIONS

  • Boil some water in a large saucepan.
  • Use the package instructions to prepare your tortellini.
  • Use a slotted spoon to transfer the cooked tortellini to a mixing bowl.
  • Use the Natural Grapeseed Oil to toss the tortellini.
  • Set it aside and allow it to cool.
  • To the boiling water, add the broccoli rabe and allow it to cook for about two to three minutes. Drain it and use cold water to rinse.
  • Add the following items to the bowl: broccoli rabe, tomatoes, mozzarella, pepperoni, the European Dipping Oil-Mediterranean Balsamic and the red onion. Toss to combine with the tortellini.
  • Refrigerate for about twenty min to cool. Serve when chilled.
