  • 1 pound boneless skinless chicken breasts
  • 1/4 cup Apple Balsamic Vinegar
  • 2 tablespoons Roasted Garlic Grapeseed Oil divided
  • 3/4 teaspoon Montreal Steak Rub divided
  • 1 pint blackberries divided
  • 2 tablespoons Apple Balsamic Vinegar
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1 (5 ounce) bag arugula
  • 1/2 red onion thinly sliced
  • 1 avocado sliced

DIRECTIONS

  • Cut chicken into 1-inch pieces.
  • In a medium bowl, combine ¼ cup Apple Balsamic Vinegar, 1 tablespoon Roasted Garlic Grapeseed Oil, and ½ teaspoon Montreal Steak Rub.
  • Add chicken and marinate for 20 minutes.
  • In another bowl, prepare dressing for salad.
  • Add ½ cup blackberries, remaining 2 tablespoons Apple Balsamic Vinegar, remaining 1 tablespoon Roasted Garlic Grapeseed Oil, honey, Dijon mustard, and remaining ¼ teaspoon Montreal Steak Rub to a food processor and blend until it is well combined.
  • Refrigerate until serving.
  • Over medium heat preheat a grill pan. Clean and grease the grill grates. Skewer the chicken and grill on all sides until it is well cooked through: 165°F
  • Assemble arugula, avocado, red onion, and remaining blackberries on a salad plate.
  • Serve chicken over a platter of salad and drizzle with prepared dressing. Enjoy.
