- 2 cups dry Israeli couscous prepared according to package directions
- Preheat oven to 375 degrees F. Heat 1/2 tablespoon Roasted Garlic Grapeseed Oil in a nonstick skillet over medium heat.
- Sear chicken in thepan and brown for 3-5 minutes on each side; remove from the pan. In the now empty skillet heat the remaining 1/2 tablespoon Natural Grapeseed Oil over medium heat.
- Add the onion and asparagus and saute for 2-3 minutes. Deglazethe pan with white wine.
- Add tomatoes, artichoke hearts, capers, and continue cooking for 2-3 minutes. Remove pan from heat and stir in Greek Dressing Mix.
- Return chicken to the pan on top of the vegetables and bake for 10-15 minutes, or until the chicken is cooked through: 165 degrees F.
- Serve over prepared Israeli couscous.
