- 1 pound shrimp peeled and deveined
- 2 tablespoons Natural Grapeseed Oil divided
- 2 tablespoons Fajita Seasoning
- 1 yellow onion sliced
- 1 red bell pepper sliced
- 1 tablespoon SPG Seasoning
- 2 avocados
- 1/2 lime juiced
- 1/4 cup chopped cilantro for garnish
- 8 (6-inch) flour tortillas
- Pat shrimp dry and toss with 1 tablespoon Grapeseed Oil and Fajita Seasoning; set aside.
- Heat remaining 1 tablespoon Grapeseed Oil in a nonstick skillet over medium heat.
- Add the onion and bell pepper; saute until tender, about 10 minutes.
- Add the Garlic Galore and saute 1 minute more. Transfer to a bowl in set aside. Heat the now empty skillet over medium to high heat.
- Add the shrimp and saute until cooked through; about 3 minutes per side.
- Return onions and peppers back to pan and cook until heated through. Mash avocado with lime juice, salt, and pepper.
- Divide shrimp and vegetables among tortillas, top with avocado, and garnish with cilantro.
