Ingredients

DIRECTIONS

  • Pat shrimp dry and toss with 1 tablespoon Grapeseed Oil and Fajita Seasoning; set aside.
  • Heat remaining 1 tablespoon Grapeseed Oil in a nonstick skillet over medium heat.
  • Add the onion and bell pepper; saute until tender, about 10 minutes.
  • Add the Garlic Galore and saute 1 minute more. Transfer to a bowl in set aside. Heat the now empty skillet over medium to high heat.
  • Add the shrimp and saute until cooked through; about 3 minutes per side.
  • Return onions and peppers back to pan and cook until heated through. Mash avocado with lime juice, salt, and pepper.
  • Divide shrimp and vegetables among tortillas, top with avocado, and garnish with cilantro.
