Pollo Stuffed Poblano | Dinner Recipes Creative

Pollo Stuffed Poblano is an attractive and tasty dish. These are not your ordinary stuffed peppers. Serve on top of saffron rice with a side salad for a spicy meal.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 (14.5 ounce) can no salt added diced tomatoes
  • 1/4 cup Taco Sauce
  • 1/4 cup sliced scallion
  • 1/2 cup shredded pepper Jack cheese
  • 4 poblano peppers

DIRECTIONS

  • Start by adding your chicken and the diced tomato to a slow cooking cooker.
  • Let them cook for about 2 hours until they are well cooked through and they are tender at a high heat.
  • After that, preheat the oven to 400 degrees F.
  • Remove your diced tomatoes and chicken from the slow cooker using a slotted spoon.
  • Cut the chicken into pieces.
  • After that, mix the shredded chicken and tomatoes with the cheese, scallion and the taco sauce.
  • Thereafter, cut a strip out of each side of the pepper then remove the seeds and the core.
  • Now load each pepper with the chicken mixture.
  • After that, place the peppers you stuffed in a baking dish.
  • Let them bake for approximately 20 minutes or until the peppers become knife tender

This is a very delicious Mexican dish for any night of the week. The poblano peppers are mild in nature but they give a very mouth- watering flavor. It’s not only delicious but also looks very impressive on the plate. I will agree that peeling the pepper, cutting them, removing the seeds and loading them is quite a pain especially to the eyes, but trust me this pain you will forget the moment you get a bit of it.
The stuffed peppers tend to look like a fiesta of many colors and different flavor. They look pretty. Don’t you think so from the description I gave? Eating this stuffed poblanos gives me mixed feelings that I love. They are rich in flavor, mild and also have a meaty texture.
