- 2 tablespoons Natural Grapeseed Oil
- 1/4 cup Natural Grapeseed Oil
- 1 yellow onion diced
- 1 pound ground pork
- 1 zucchini diced
- 1/2 cup frozen corn
- 1 (14.5 ounce) can petite diced tomatoes
- 2 tablespoons Italian Sausage Seasoning
- 1 bag Corn Bread Mix
- 1/2 cup low fat milk
- 2 large eggs
- Preheat oven to 450 degrees F. Heat 2 tablespoons Natural Grapeseed Oil in a 10-inch cast iron skillet over medium heat. Add onion and ground pork; saute until pork is completely browned. Stir in zucchini, corn, and diced tomatoes.
- Season with Italian Sausage Seasoning. Remove pan from heat. In a mixing bowl, whisk together Corn Bread Mix, milk, eggs, and remaining 1/4 cup Natural Grapeseed Oil. Pour evenly over the skillet.
- Bake for about 25 minutes or until the corn bread is golden brown.
