- 2 cups unsalted raw pecans
- 1/2 cup Heavenly Chocolate Mousse Mix divided
- 2 tablespoons organic coconut oil
- 1 cup agave syrup divided
- 2 teaspoons vanilla extract divided
- 1/2 teaspoon salt divided
- 1 cup dark chocolate chopped
- 1 tablespoon almond butter
- 1 tablespoon cornstarch
- 1/3 cup almond milk
- 2 cups avocado
- Grease a 9 inch pie plate. In a food processor, pulse the pecans until just chopped. Add 1/4 cup Heavenly Chocolate Mousse Mix, Organic Coconut Oil, 1/4 cup agave nectar, 1 teaspoon vanilla extract, and 1/4 teaspoon salt to the food processor and pulse until combined. Spread the mixture evenly into the pie plate. Press down with your fingers or a spatula to create a firm, solid crust. Place in freezer.
- Place the chopped chocolate, 1/4 cup agave nectar, almond butter, and 1/4 teaspoon salt in a medium-size pan on low heat until melted, stirring constantly to prevent burning. In a small bowl, add the cornstarch to the almond milk. Whisk until cornstarch is dissolved. Slowly add the almond milk mixture to the chocolate mixture. Cook the mixture until it bubbles up and thickens. Set aside until cool before adding 1 teaspoon vanilla extract. Add the avocado, remaining Heavenly Chocolate Mousse Mix, and cooled chocolate mixture to a food processor and blend on high until smooth.
- Remove the crust from the freezer. Top the crust with the mousse and smooth it with a spatula. Place the torte in the freezer for at least 2 hours or until firm. When ready to serve, pull the torte from the freezer, let it sit for a few minutes to slightly soften, and serve topped with extra pecans.
