  • 1 cup pastry flour
  • 1 bag Chocolate Mousse Mix
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 cup applesauce
  • 1/2 cup nonfat plain Greek yogurt
  • 1 cup shredded zucchini

DIRECTIONS

  • Switch on the oven to a temperature of 350 degrees F to preheat.
  • Add flour, Heavenly Chocolate Mousse, baking powder, baking soda, chocolate chips, and sugar to a mixing bowl. Mix to combine.
  • Whisk together eggs, applesauce, Greek yogurt, and shredded zucchini in a separate mixing bowl.
  • Combine wet and dry ingredients until just combined. Avoid over mixing.
  • Grease muffin cups. Divide the mixture equally among the muffin cups.
