- 1 zucchini chopped
- 1/2 red onion sliced
- 1 pound mushrooms halved
- 2 cups cherry tomatoes
- 8 cloves garlic peeled
- 3 tablespoons Natural Grapeseed Oil
- 2 teaspoons Hearty Spaghetti Sauce Blend
- 1/2 teaspoon salt
- Preheat oven to 425°F and line a sheet pan with greased foil.
- Toss all ingredients together and spread on the prepared sheet pan.
- Roast for 20-30 minutes, stirring halfway through cooking time, until vegetables are lightly browned and tender.
