These twice-baked potatoes are so large and filling that some of Glamlifemd's customers order them as an entrée.

- 3 russet potatoes
- 1/2 cup nonfat plain Greek yogurt
- 1/4 cup low fat milk
- 2 tablespoons unsalted butter melted
- 1 tablespoon Horseradish Dill Blend
- 8 ounces broccoli steamed
- 3/4 cup shredded cheddar cheese
- Preheat oven to 425 degrees F. Bake potatoes for 45-60 minutes or until tender. (Potatoes can also be cooked in the microwave).
- Once cool enough to handle, cut potatoes in half lengthwise. Spoon out the inside of each half and place in a large mixing bowl. (Leave about a 1/4 inch of the flesh of the potato intact.)
- Set skins in a large baking dish.
- Mash the potato in the bowl with the Greek yogurt, milk, butter, and Horseradish Dill Blend. Fill each potato half with the mashed potatoes.
- Top with broccoli and cheese.
- Return to oven and bake until heated through and cheese is melted.
