Twice Baked Potatoes | Vegetable Side Dish Recipes

Twice-baked potatoes are one of our favourite dinner sides. Made with butter, stuffed with cheese and topped with sour cream or fresh chives, twice-baked. For a wonderful weekend, Vegetable Side Dish Recipes at our side.

These twice-baked potatoes are so large and filling that some of Glamlifemd's customers order them as an entrée.

  • 3 russet potatoes
  • 1/2 cup nonfat plain Greek yogurt
  • 1/4 cup low fat milk
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon Horseradish Dill Blend
  • 8 ounces broccoli steamed
  • 3/4 cup shredded cheddar cheese


  • Preheat oven to 425 degrees F. Bake potatoes for 45-60 minutes or until tender. (Potatoes can also be cooked in the microwave).
  • Once cool enough to handle, cut potatoes in half lengthwise. Spoon out the inside of each half and place in a large mixing bowl. (Leave about a 1/4 inch of the flesh of the potato intact.)
  • Set skins in a large baking dish.
  • Mash the potato in the bowl with the Greek yogurt, milk, butter, and Horseradish Dill Blend. Fill each potato half with the mashed potatoes.
  • Top with broccoli and cheese.
  • Return to oven and bake until heated through and cheese is melted.
