Ingredients

  • 2 zucchini quartered lengthwise
  • 1 tablespoon Roasted Garlic Grapeseed Oil
  • 3 tablespoons grated Parmesan cheese
  • 1/2 teaspoon Montreal Steak Rub

DIRECTIONS

  • Preheat oven to 350 degrees F, spray a cooling rack with cooking spray, and place rack on a sheet pan. Arrange zucchini quarters on rack and drizzle with Roasted Garlic Grapeseed Oil.
  • Mix together parmesan cheese and Montreal Steak Rub, sprinkle on zucchini. Bake for 15 minutes. Broil for 2-3 minutes more until zucchini is golden brown on top.
