  • 1/2 cup diced asparagus
  • 1/4 cup finely diced mushrooms
  • 3 large eggs
  • 1/2 teaspoon Souvlaki Seasoning
  • 3 gluten-free bagels
  • 3 slices red onion
  • 1 tablespoon crumbled feta cheese


  • Preheat oven to 350 degrees F and grease an oversized muffin tin.
  • Add asparagus, mushrooms, eggs, and Souvlaki Seasoning to 3 muffin cups and bake for 20 minutes.
  • Loosen the cooked egg with a knife or toothpick.
  • Assemble sandwich by placing 1 slice of onion on the bagel bottom, followed by an egg, feta cheese, and top of the bagel.
