- 2 scallions sliced
- 8 large eggs
- Preheat oven to 350 degrees F. Heat Roasted Garlic Grapeseed Oil in a 10-inch nonstick skillet over medium-high heat.
- Add the bell pepper, celery, tomatoes, chicken Andouille sausage, and Cajun Seasoning and cook until vegetables are tender, about 7-10 minutes.
