Ingredients

  • 8 strips bacon diced
  • 1 small yellow onion diced
  • 20 ounces seltzer
  • 1 cup shredded sharp cheddar cheese
  • 1 bag Quick And Easy Beer Bread Mix

DIRECTIONS

  • Switch on the oven to a temperature of 350 degrees to preheat. Grease a 12 cup muffin tin.
  • Place a 12-inch nonstick skillet over medium heat. Sauté bacon until it is crispy. Remove bacon from skillet.
  • Add onion in the same skillet. Cook for 10 minutes or until well browned. Stir occasionally.
  • Add all ingredients in a large mixing bowl. Mix thoroughly until it is well combined.
  •  Fill each of the muffin tins with the bacon beer bread mixture, about ¾ full. Bake muffins for 20 to 25 minutes or until a toothpick comes out dry when pricked at the centre of the muffin.
  • Cool for 20 minutes before serving
