When purchasing lamb, go for the leaner cuts. Lean cuts are the best for roasting, broiling, grilling, braising, or stewing. Loin chops are the most tender and leanest of all the lamb chops. You need to get good cuts which will cook quickly.

When grilling, place the thinner cuts of lamb closer to the heat source than thicker cuts. The thicker the cut, the more cooking time it requires. If you happen to place a thicker cut of lamb too close to the source of heat, the surface will char long before the inner parts are adequately cooked to the required temperature.

Do not purchase lamb which has dried out edges. If it does not smell fresh and feels slimy, avoid it at all costs. Cuts of lamb have varied colors from light red to pink. The fat should be white, with a waxy appearance. The bones should look reddish and must be moist. Best lamb chops for grilling are the rib, loin, or sirloin chops. For marinated chops, shoulder chops are the better choice. Look for a lamb chop, at least three-fourths of an inch thick with a healthy mix of both fat and meat. Don't focus so much on the amount of meat within the chop, but on the quality of the meat. Plan for 2-3 lamb chops per person.

While grilling the meat, you should turn it when it's half-done. In order to avoid puncturing the meat, make use of tongs. It is advisable to check whether your ground lamb dish is done using a meat thermometer. Make sure that your grill grates have been cleaned and oiled well.
