- 1 tablespoon Roasted Garlic Grapeseed Oil
- 1 cup sliced mushrooms
- 1 cup chopped asparagus
- 2 cups baby spinach
- 1/2 cup chopped roasted red pepper
- 1 tablespoon Mediterranean Dry Rub
- 1/3 cup crumbled feta cheese
- 5 large eggs beaten
- Preheat oven to 350 degrees F.
- Heat Roasted Garlic Grapeseed Oil in an 8-inch nonstick, oven safe skillet over medium-high heat.
- Saute mushrooms and asparagus for 5 minutes until vegetables soften and start to brown.
- Stir in spinach, roasted red peppers, and Mediterranean Dry Rub and cook 2-3 minutes until the spinach wilts.
- Sprinkle the feta over the vegetables, then top with the beaten eggs. Lightly stir to ensure the egg spreads across the entire pan.
- Place the skillet in the oven and bake for about 10-12 minutes until the eggs have set. *This dish is a great way to use up any leftover vegetables.
