Hearty minestrone soup is packed full of veggies and lots of flavours! In a large stockpot or Dutch oven set over medium heat, add the olive oil. When the oil is hot, add the onion, celery and carrots. Cook until soft, about 5-6 minutes.

Ingredients

  • 2 tablespoons Natural Grapeseed Oil
  • 1 yellow onion diced
  • 2 celery stalks diced
  • 2 carrots diced
  • 4 tablespoons Vegetable Broth Mix
  • 6 cups water
  • 2 tablespoons Alfredo Sauce Mix
  • 1 (14.5 ounce) can no salt added diced tomatoes
  • 1 (15.5 ounce) can kidney beans drained and rinsed
  • 1 (15.5 ounce) can chickpeas drained and rinsed
  • 1/2 pound green beans trimmed and cut into 1-inch pieces
  • 1 cup small shells
  • 1 (6 ounce) bag baby spinach

DIRECTIONS

  • In a large saucepan over medium heat, heat Natural Grapeseed Oil
  • Add the onion, celery, and carrot and sauté for 5 minutes.
  • Add the Vegetable Broth Mix, water, Alfredo Sauce Mix, diced tomatoes, kidney beans, and chickpeas and bring to a boil.
  • Reduce heat to a simmer and cook for 20 minutes.
  • Stir in green beans and shells and cook for another 10-15 minutes or until pasta is tender.
  • Stir in spinach until wilted.
