Ingredients

DIRECTIONS

  •  Switch on the oven to a temperature of 350 degrees F to preheat.
  • Line a sheet pan with parchment. Lay the eggplant slices on the lined sheet pan. Brush eggplants with 2 tablespoons of Natural Grapeseed Oil. Season with salt.
  •  Bake for 10 minutes. Remove from oven.
  • Place a non stick skillet over medium heat. Heat remaining 1 teaspoon Natural Grapeseed Oil. Add the onions and cook for 5 minutes. Remove from heat
  • Add tomato sauce and Pizza Sauce Seasoning to the fried onions. Mix to combine Spread sauce over each eggplant slice.
  • Top with spinach, tomatoes, and fresh mozzarella.
  • Bake for 10 minutes or until eggplant becomes tender.
  • Serve and Garnish with fresh cracked pepper and parsley if you like.

When you go to buy eggplant, pick a few to sample how they feel. If they feel heavy in your hand, it is a sign that the flesh is fresh and in excellent condition. You should choose one whose skin is taut, vivid, and shiny, as that means it's freshly harvested.

Eggplant having dull skin is an indication of poor storage, therefore poor quality. If the skin has wrinkles, it is a sign that the eggplant was harvested a long time ago and is old. This could mean that it's going to be bitter, as bitterness can come with age.
