- 1 eggplant sliced into 1/2-inch rounds
- 1/2 teaspoon salt
- 2 tablespoons Roasted Garlic Grapeseed Oil
- 1/4 cup Basil Pesto Sauce
- 1 large tomato sliced into 1/2-inch rounds
- 16 ounces fresh mozzarella cheese sliced into 1/2-inch rounds
- 10 leaves basil
- Add the slices of eggplant to a bowl. Season with salt .Set aside.
- Pat dries the eggplant using a kitchen towel. Brush each slice with Roasted Garlic Grapeseed Oil.
- Grill each side for approximately 2-3 minutes or until they are slightly browned. Remove from grill.
- Top each slice with Basil Pesto Sauce.
- Layer with the slices of tomato, mozzarella, and basil leaves.
