Eggplant Caprese Stacks

Eggplant Caprese Stacks is the kind of perfect meal that just cannot be resisted for long by anyone in the family.

Ingredients

  • 1 eggplant sliced into 1/2-inch rounds
  • 1/2 teaspoon salt
  • 2 tablespoons Roasted Garlic Grapeseed Oil
  • 1/4 cup Basil Pesto Sauce
  • 1 large tomato sliced into 1/2-inch rounds
  • 16 ounces fresh mozzarella cheese sliced into 1/2-inch rounds
  • 10 leaves basil

DIRECTIONS

  • Add the slices of eggplant to a bowl. Season with salt .Set aside.
  • Pat dries the eggplant using a kitchen towel. Brush each slice with Roasted Garlic Grapeseed Oil.
  • Grill each side for approximately 2-3 minutes or until they are slightly browned. Remove from grill.
  •  Top each slice with Basil Pesto Sauce.
  • Layer with the slices of tomato, mozzarella, and basil leaves.

 Eggplant Caprese stack is best when all the ingredients used are still fresh. You should also feast on this wonderful salad while it is still fresh to enjoy its rich taste and flavor. Adding salt to your eggplant slices helps draw out its juices which can at times be bitter. Salting also helps tighten the flesh as well as season it.

Slice your mozzarella cheese into slices of similar thickness to that of the tomatoes.  If your cheese is made up of big chunks, you need to drain them and then slice them uniformly. To get the right thickness of the mozzarella, when purchasing, look for the packages marked with pre-sliced but not sliced. It helps in getting perfect size.
