Sweet Potato Nacho Fries | Recipes Christmas Appetizers

Ingredients

  • 4 medium sweet potatoes sliced into fries
  • 3 tablespoons Rosemary Garlic Seasoning divided
  • 2 teaspoons Fajita Seasoning
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/2 red onion thinly sliced
  • 1 red bell pepper diced
  • 2 cubanelle peppers diced
  • 1 cup frozen corn thawed
  • 1 (15.5 ounce) can no salt added black beans drained and rinsed
  • 1 tablespoon Chipotle Lime Rub
  • 1/4 cup cilantro

DIRECTIONS

  • Switch on the oven to a temperature of 425 degrees F to preheat.
  •  Line a sheet pan with foil.
  • Add sweet potatoes, 2 tablespoons Rosemary Garlic Seasoning, Fajita Seasoning, salt, and pepper. Toss to coat.
  • Spread sweet potato mixture in one layer on the sheet pan.
  •  Cook for 30 minutes, tossing every 10 minutes.
  • Meanwhile, heat remaining Rosemary Garlic Seasoning in a 12-inch skillet. Sauté red onions until they become soft and translucent.
  • Add red bell and cubanelle peppers. Continue cooking for 5 minutes more or until peppers become soft.
  • Add corn, black beans, and Chipotle Lime Rub. Cook for an additional 2 minutes. Remove from heat.
  • Stir in cilantro.
  • Serve bean and pepper mixture over sweet potato fries.
  • Top with sour cream if you like.
