Ingredients

  • 1/2 cup water
  • 1/4 cup quinoa
  • 24 large baby bella mushrooms
  • 1/4 cup scallion
  • 1/4 cup parsley
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons diced sun-dried tomatoes
  • 1 teaspoon Souvlaki Seasoning
  • 1 tablespoon natural grapeseed oil

DIRECTIONS

  • Bring water to a boil in a small pot.
  • Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is tender and liquid is absorbed.
  • Meanwhile preheat oven to 400 degrees F.
  • Remove and discard stems from the mushrooms. Place mushrooms on a greased sheet pan.
  • Combine cooked quinoa with remaining ingredients. Season with salt if desired.
  • Fill each mushroom with the quinoa mixture.
  • Bake for 15-20 minutes or until mushrooms are knife tender.
